When I travel, I don’t just pack my bags, I pack my appetite too. For me, exploring a city isn’t complete without diving into its local cuisine. So, when I finally planned my trip to Thailand, I knew my taste buds were in for an unforgettable ride.
Thai food has always had a special place on my must-try list. I’ve enjoyed Thai dishes before in Dubai, but there’s something incredibly exciting about tasting authentic flavors in the country they originated from.
From vibrant curries to sizzling street-side stir-fries, Thailand is a paradise for food lovers. The variety is endless, and every corner seems to be hiding a new culinary surprise. Whether it’s a busy market in Bangkok or a beach shack in Krabi, food is everywhere and it’s delicious.
Here are some of my absolute favorite Thai dishes that made my trip even more special (and a little spicier!).
1. Mango Sticky Rice – Kor Panich, Bangkok – ⭐️⭐️⭐️⭐️⭐️
If there’s one thing I can say with confidence, it’s that I’m obsessed with mango sticky rice and Thailand did not disappoint. Over my 9-day trip, I had this iconic Thai dessert every single day. Different plates of mango sticky rice, each beautifully presented and uniquely flavored. From floral garnishes to coconut drizzle art, every restaurant had its own take, and I loved the creativity.
But the one that truly stole my heart? The mango sticky rice from Kor Panich in Bangkok. It didn’t come with a fancy presentation or dramatic plating, but oh, the flavour! It was pure magic. Perfectly ripe mangoes paired with warm, fragrant sticky rice and rich coconut cream. This no-frills, Michelin-starred spot knows exactly what it’s doing.
Yes, Kor Panich is a Michelin-recognized eatery, but the prices are surprisingly affordable making it a double win in my book. Tasting such incredible quality at that price felt like discovering a hidden gem. It was a small moment of foodie bliss that I’ll never forget.

2. Pad Thai – Thipsamai, Bangkok – ⭐️⭐️⭐️⭐️
Having Pad Thai in Thailand was high on my foodie checklist and Thipsamai in Bangkok made it unforgettable. This place is nothing short of a Pad Thai legend, and the long queue outside speaks for itself. I had to wait in line (like everyone else), but honestly, the anticipation just made the first bite taste even better.
Thipsamai’s signature Pad Thai came wrapped in a delicate layer of egg, with perfectly stir-fried noodles tucked inside. The flavors were beautifully balanced, sweet, tangy, slightly smoky and the texture was spot on. Juicy prawns, crunchy bean sprouts, and a squeeze of lime brought it all together.
This isn’t your regular street stall Pad Thai, it’s a full-on experience. Thipsamai has earned its reputation as one of the best Pad Thai restaurants in Bangkok, and I totally get the hype now. If you’re visiting, come hungry and be prepared to queue, it’s absolutely worth it.

3. Pineapple Fried Rice – ⭐️⭐️⭐️⭐️
One dish that surprised me in the best way? Pineapple Fried Rice. I’ve had it before in other countries, but tasting it in Thailand, where it originated, was a whole different experience. Served inside a hollowed-out pineapple with juicy chunks of fruit, veggies, and cashews, this dish was the perfect mix of sweet and savory.
The flavors were bold, the presentation was tropical and Insta-worthy, and the crunch from the roasted cashews added such a nice texture. It felt like comfort food with a vacation twist. Definitely a must-try if you’re looking for something filling but light on the palate.

4. Grilled Banana Roti – ⭐️⭐️⭐️⭐️
Street food in Thailand is on another level, and banana roti is one of those treats I could never say no to. I tried the grilled banana roti version, and wow! crispy on the outside, warm and gooey inside, and often topped with sweetened condensed milk or chocolate drizzle.
I usually grabbed one in the evenings while strolling through night markets. It’s the kind of snack that’s not only delicious but fun to watch being made. The way they flip and fry the dough is almost like a street performance. Pro tip: eat it hot, it’s absolutely addictive!

5. Coconut Ice Cream – ⭐️⭐️⭐️
Thailand’s heat demands something cold and refreshing and coconut ice cream delivers. It’s creamy, mildly sweet, and has a rich coconut flavor that’s both refreshing and indulgent at the same time.
What made it special for me was how it was served, often in a coconut shell, with toppings like sticky rice, roasted peanuts, or sweet corn. If you’re a coconut lover like me, this is one Thai street dessert you shouldn’t miss.

6. Stir-Fried Morning Glory (Pak Boong) – ⭐️⭐️⭐️
This one’s for the veggie lovers (or even if you’re not you’ll still love it!). Stir-fried morning glory, locally known as Pak Boong, is a simple yet flavorful Thai dish that appears on nearly every menu.
It’s made with fresh water spinach stir-fried in garlic, chili, and soy or oyster sauce and it packs a surprising punch. It’s the perfect side to balance out rich curries or fried dishes. I had it multiple times during my trip and still craved more. Don’t skip this just because it’s a green dish, it’s full of flavor and super satisfying.

Final Thoughts
Thailand isn’t just a feast for the eyes, it’s a feast for the soul, especially if you love food as much as I do. Every dish I tried added a new layer to my travel story. From street snacks to local favorites, the flavors were unforgettable. If you ever visit, make sure your taste buds are ready for an adventure of their own!
